Our Story

Fresh, local ingredients, seasonal menus, a casual atmosphere, and gourmet flavors - this is the list of ingredients that makes By Word of Mouth a cherished local favorite in Big Sky, Montana.

 

With a love for high quality, seasonal foods, John and Pam Flach opened By Word of Mouth in 1995 as a gourmet delicatessen and wine shop. As word did indeed spread about the fine foods they carried, the couple transformed By Word of Mouth into a restaurant, creating a venue for high quality, seasonal gourmet dining in an elegantly casual setting with John at the helm as head chef. Not only did they wow diners with their eclectic menu, handcrafted cocktails, and award-winning wine list upon opening, but they also filled a niche in Big Sky as the neighborhood bistro. On any given night there may be local families dining with kids in tow, fishermen enjoying micro-brews and gourmet pub fare, and couples sharing an intimate meal.

 

As By Word of Mouth evolved in Big Sky over the years, so did the Flach's family. Their three kids are often seen 'helping' in the restaurant while Pam manages the front of the house. Pam's brother and sister-in-law, Matt and Jacy Rothschiller, provide locally grown organic vegetables from their Bozeman-based farm, Gallatin Valley Botanicals. When they began using the locally grown produce at the family farm's inception, The Flachs and their customers quickly became hooked on the incomparable freshness and flavor.

 

A wide variety of vegetables from Gallatin Valley Botanicals- from spinach, arugula, beets, and summer squash to heirloom tomatoes, Chesnok Red garlic, Dragon Lingerie beans, and Napa cabbage' are delivered to the By Word of Mouth kitchen well into the winter months, with their local root vegetables used up until March. And Montana-raised Centennial Valley beef is the centerpiece for the restaurant's 'Montana Steak du Jour' and other beef offerings. With nearly 15 years under their belts, both the Flach's passion for food and the character of the restaurant has only improved with age. They have an unwavering dedication to creating authentic flavors from scratch'from their signature sauces to their infused vodkas'and sharing these simple pleasures with their valued and dedicated customers. The Flachs continue to go out on a limb to find the best of the best; their Wine Spectator award-winning wine list serving as a perfect example.

 

And that's their story so far. It's no wonder that the word has spread like wildfire about Big Sky's own neighborhood bistro, By Word of Mouth.
